Three simple tips for cooking with tin-lined copper

1. Add your fat or liquid first. Cover the base with butter, oil, or cooking liquid before turning on the heat. Never heat a tin-lined pan empty.
2. Start low. Copper responds quickly; low to medium heat is usually plenty. Avoid very high-heat searing and never leave a pan heating unattended.
3. Be kind to the lining. Use wooden or silicone utensils, let the pan cool, and hand-wash with mild soap and a soft sponge. Avoid abrasive scrubbers and use potholders for hot handles.

Tin naturally darkens with time and use; color alone does not mean the lining is unsafe. If bare copper shows through the cooking surface, have the lining assessed and retinned before further cooking.
