Description

Small and mighty, with the sort of satisfying weight you notice the moment you pick one up. We found these two wonderful copper casseroles at a street market near the Bastille in Paris. Solid, substantial, and full of character, they are the kind of kitchen treasure we love in our Everyday Château, and know you'll love in yours.

Imagine a little soup simmering for lunch, buttery vegetables for supper, or a creamy risotto brought to the table in beautiful copper. With their brass handles and copper lids, these compact, heavy-duty pots are every bit as lovely on an open shelf as they are beside the stove.

A little reassurance about dark tin

Tin naturally develops gray and darker tones with time, use, and oxidation. This coloring alone does not mean a lining is unsafe, and it does not need to stay shiny silver to be useful. What matters is the condition of the lining: exposed copper where the tin has worn through calls for assessment and retinning before further cooking. The photographs show the differing interior appearance of the two pots; natural variation is part of their vintage character.

Three simple tips for cooking with tin-lined copper

  1. Add your fat or liquid first. Cover the base with oil, butter, or cooking liquid before turning on the heat. Never heat the pot empty.
  2. Start low. Copper responds quickly, so low to medium heat is usually plenty. Avoid high-heat searing and never leave the pot heating unattended.
  3. Treat the tin gently. Choose wooden or silicone utensils, let the pot cool, and hand-wash with mild soap and a soft sponge. Avoid abrasive scrubbers and use potholders for hot handles.
